The Fat Cell Theory

The amount of fat in a person's body is a reflection of both the number and the size of the fat cells. The number of fat cells increases most rapidly during the growing years of late childhood and early puberty. Fat cells/adipocytes proliferate in three stages : in the first two years of life; when the child is about 7 years old and and during adolescence. 

When the child eats too much his or her fat cells swell up until they are filled to complete capacity. When these fat cells have grown to their complete size and cannot hold more; this is when there is production of new fat cells. A high number of fat cells is known as "Hyperplastic Obesity". When this child with an increased number of fat cells reduces weight before he is fully grown the number of fat cells does not reduce, it is only the size of the fat cell that reduces but he is stuck with the extra fat cells and thus a greater capacity to store fat forever.

  • The size of the fat cell dwindles, but not the number.
  • People with extra fat cells tend to regain the lost weight rapidly.
  • In contrast, people with an average number of enlarged fat cells may be more successful in maintaining the weight loss.

Can drinking apple cider vinegar help someone lose weight?

The answer might be yes, but it is not proven.

Apple cider vinegar is made by fermenting the sugar from apples. This turns them into acetic acid, which is the active ingredient in vinegar.

To the recent Health claims of reducing belly fat, lowering cholesterol and reducing blood sugar levels are very small studies and requires more research to prove such claims more strongly with scientific proofs.

The main substance in vinegar, acetic acid can kill many types of harmful bacteria or prevent them from multiplying in our body.

Many Research studies have been conducted on how apple cider vinegar can help in reducing body fat but requires more research work in recent years. A study in Bioscience, Biotechnology, and Biochemistry found that mice who were given acetic acid were less likely to gain body fat.The mice that were given the acetic acid had higher energy expenditure, oxygen intake, and burned more fat for energy than those given just water. The authors state that this suggests acetic acid could help suppress body fat buildup.

A study in the European Journal of Clinical Nutrition looked at how glucose, insulin, and feelings of fullness were different in those who consumed acetic acid versus those who did not.Twelve people were given three different levels of vinegar with acetic acid after eating a portion of white bread. Another group was given bread with no vinegar.The authors found that the people who received the highest dose of acetic acid had lower blood sugar and insulin after eating the bread than the other groups. They also found that the higher the dose of acetic acid, the fuller the participants felt.

Standardization and development of probiotic enriched curd


RESEARCH TOPIC: Standardization and development of probiotic enriched curd and study it's effect on subjects with hypertension.

AUTHORS: Sonal Dhanuka, Prerana Solanki, Pallavi G. Shettigar

AIM: The aim of the study was to standardize and develop a probiotic rich curd (using lactobacillus helveticus) and to study its effect on subjects with hypertension.

OBJECTIVES: 1. Standardization and development of probiotic enriched curd. 2. Sensory evaluation to be conducted for the products developed and evaluating any significant reduction in the systolic and diastolic blood pressure using probiotic enriched curd.

METHODOLOGY: The study involved two groups test group and the control group (14 in each group). The test group was given 100ml of curd fermented with lactobacillus helveticus and the control group was given 100ml of standard curd fermented using standard starter culture for a period of 45 days. Every 7th day the blood pressure readings were taken for both the groups and a daily subject evaluation form was filled to check the acceptability of the curd. A structured questionnaire was used for data collection. Paired sample t-test, repeated measures, independent sample t-test and binary logistic regression were used for analyzing the data(using SPSS version 16).

RESULTS: There was a decline in the mean value of systolic and diastolic blood pressure towards the end of the intervention period in case of test group. Although, statistically there was no significant difference in the systolic blood pressure of test and control group but a significant difference in diastolic blood pressure was seen, a significant decline in diastolic blood pressure was seen in case of test group which can be attributed to the probiotic enriched curd given during the intervention period.

CONCLUSION: It can be concluded that lactobacillus helveticus can play a very important role in the reduction of blood pressure in hypertensive subjects. This probiotic enriched curd can be used by dairy industries, as curd being a part of daily diet can help the hypertensive subjects to have a better control over hypertension.
